Eff, Marry, Kill

Oh wow! When I seen this link-up awhile ago, I was excited to get in on it! But then it disappeared for awhile, and I have been waiting impatiently for it to return.

Although he is the assassin of the  group,

Well Jax is THE man.  He's the President of the Club,
seems to be the smartest of the crew, and by far is the hottest
(especially with the longer locks). 
He was the main reason I actually gave the
show a second glance. 
Just call me Mrs. Jax Teller. 

Kill:  Opie

Although I think he is gorgeous (in a burly sort of way), the man
abandoned his children and married a porno-star. 
So sorry Opie - I'd have to kill ya.

Sometimes and Always

 Time to link up with the beautiful Megan from Mackey Madness for:


Sometimes I think it would be nice to take a bubble bath.
Always just take a shower - never have time (or the privacy) to take a bath.

Sometimes it frustrates me that I feel I'm not losing weight fast enough.
Always have to remember that I'm trying to lose weight at a healthy rate, and 2 lbs. a week is awesome.

Sometimes I love wearing high heels to work.
Always when I do, it's the day I have to run around the building like a mad-woman and my feet end up hating me.

Sometimes I hate eating lunch at work.
Always know that it's the best thing cost-wise and health-wise.

Sometimes I hate losing when I play cribbage against GTuck!
Always love that he still is patient with me with my scoring, even after 5 years!  I counted Nobs today!  I'm learning  :)

Sometimes I wish I had more time to craft, scrapbook, read, etc.
Always enjoy my crazy, hectic life!

Oh what weekend!!! The weather here in Michigan is beyond awesome for the month of February! It has been sunny and mild (high 40's / low 50's).  I was able to take the dog for a walk and go for a hike at Kensington.

So on this beautiful Monday, I'm giving a Thumb Up to the Michigan Weather!

[Gurlee]Girrl on Friday

First - I want to welcome all of my new Followers!  Thanks for stopping by and following along! 

I want to thank all of the fabulous ladies who dropped by and offered up their favorite "dark" colored polishes last week.  I now have a few different options and look forward to trying them out! 

While browsing an Avon book at work, I happened upon a a bargain.  My Avon rep had a sticky note attached to her book advertising two polishes she had available for $1.50.  One was a sheer pink, and the other was this beauty:

I love it.  It reminds me of chocolate ice cream!! So pretty.


I've never been a fan of Avon polish, but I was very happy with this one.  It had good coverage after one coat, but I did two because I always do.  It dried fairly quick too.  I think I'll be trying out a few other colors soon.

Now on to some Randomness on Friday:
  • Booked my son's 7th birthday party.  We will be playing Laser Tag. He will be so excited.  I'll be happy that the party is not at my house = no clean-up!  PERFECT!
  • Had a successful Super Bowl Hot Dog Day at work today.  I am the "head" of our company's Activities Committee.  Who knew that people would flock to get a free Super Bowl Square?  We sold out of hot dogs (200) and had over 100 people show up to claim a square.  I would call that a success.
  • I purchased 7 squares for the Big Game.  I won't get rich off of any of them if I win, but it will make the game way more interesting if I have something to look forward too, like the score!
  • Going to try some new Paleo recipes this weekend.  Paleo pizza and chicken wings are at the top of my list.
  • Although I have THE BEST bowling team, we are in LAST place in our league!  This is just too funny to me.  Since we are all pretty good bowlers, we have to "give" too many pins to our competition each week.  Sometimes it's hard to make up 250 points in a game - unless everyone is bowling well.  We just haven't been able to pull it together.  Oh well - at least it's fun!
  • Totally looking forward to spending some time outside this weekend.  The weather should be mild (40ish), so I'm hoping to get a good hike in.
  • Cannot wait to get my hair done Sunday.  You reading this Jenny Jenny? Bangs are too heavy (not really too long), and I need my color touched up - those greys are showing up again!  Girl problems I tell ya!

February Photo A Day Challenge

I've seen many Photo A Day Challenges, but unfortunately, I always see them when they are a week or two into the challenge.  Luckily, I caught this one the day before it began.  I've noticed there are a few other fellow bloggers taking part too.  You can read all about it here

I hope to stay on top of it each day - weekends will be rough - but I think it's a great challenge for me.  Plus, it's another item to add to my list of "Firsts in 2012"!

Beginning to Cook

It’s no secret that I am not a Chef.  I’m lucky if I actually prepare five meals a year.  Don’t get me wrong, I make spaghetti, mac-n-cheese and hot dogs like a pro, but to actually create a REAL meal, it just doesn’t happen.

While looking for some Paleo friendly meals, I came across this awesome crock pot recipe.  This working GurleeGirrl loves crock pot meals.  Would I like to have my meal ready when I walk in the door?  Yes please.  So I decided to give it a try.

Pine Nut Meatballs with Assorted Veggies and Spinach

What You’ll Need:
  • One pound of ground meat - beef, veal, lamb, and even turkey will work just fine. I chose to use beef, as it was what I had on hand.
  • Two eggs
  • 1/2 cup of pine nuts (Pignoli) (expensive as heck - but so worth it!)
  • 1 to 2 cups of assorted grated or shredded veggies. I used a mixture of what I had in my veggie bin (cauliflower, zucchini and red onion).
  • 1 to 2 cups of crushed tomatoes.  I used 4 tomatoes pureed in my food processor.  You could use canned.
  • About 4 heaping hand fulls of fresh spinach

Let’s Get Started:
Shred or grate your assorted vegetables until you fill a small bowl with about 2 cups of a vegetable mixture. Hand toss well.
Add in your 2 beaten eggs to the vegetable mix and stir well. Make sure the veggies are completely coated by the egg. Press this mixture down into the bowl and let it sit for a minute or two.  

Place ground meat of choice into a large mixing bowl break apart evenly.


Add your egg and vegetable mixture to the ground meat. Use your hands to fully mix the ingredients. Roll the mixture over itself many times, as if you were kneading dough. Press the mixture down into the bowl to form one large meat patty.

 Time to roll your meatballs. I rolled them to a size slightly larger than a golf ball. Make sure you cup your hands to ensure they are packed tightly.  I got 15 out of my mixture.

Unless you are using crushed canned tomatoes, take 4-5 fresh tomatoes and puree with food processor.


 Use just enough of your crushed tomatoes to cover the bottom of your crock pot / slow cooker. You should only see red at the bottom now.


Cover the tomatoes with 2 hand fulls of spinach or until you only see green at the bottom.


Line your meatballs around the crock pot, they should be slightly touching the sides. Form a ring around the pot and place the extra meatballs inside to form a second ring.


Spoon any left over crushed tomatoes to fill the small gaps between the meatballs. Do not cover the meatballs.

Cover the meatballs with another 2 large hand fulls of spinach or until you can only see green. I used the rest of the bag.  Sprinkle any extra pine nuts on top of the spinach.

Place the cover on your crock pot and set the timer for 3 to 4 hours on high or 5 to 6 hours on low.  I chose to cook mine on high for 3-1/2 hours.  I actually prepared my “crock” the night before and placed it in the refrigerator and my mom plugged it in at 2:30pm for me. 

When I walked in at 5:15pm, the house smelled so good!  I decided to steam some fresh asparagus and broccoli to accompany my meatballs. Dinner was on the table by 6:00pm. 
I plated 3 meatballs per adult and 2 for the daughter (my son is way too picky and wouldn’t even try them). 
My masterpiece!

My daughter’s first response was that they were really good – but she ended up dipping them in the gravy she had with her mashed potatoes.  That’s okay with me, because even with the gravy, I know this was a much healthier alternative to chicken nuggets, which is her normal request.

They were extremely juicy and the veggies gave them plenty of flavor!  I was a little worried since the recipe didn't even call for salt and pepper. 

I am extremely proud of myself too.  I've always had a phobia about touching uncooked meat - thus the reason I do not cook.  I actually used my bare hands to mix the meat and veggie mixture together!! HUGE step for me.  

Overall - easy and tasty!  I will definitely be making these again!
