Tomorrow marks the official one-week of dieting. So far I've determined that eating "healthy" isn't too hard. I'm actually finding it easy, and most of all, the food has been amazing.
Seriously, check these beautiful dishes out:
Moroccan Meatballs – These were beyond AMAZING. They are made with ground lamb meat (which happens to be my favorite!) and are bursting with flavor. The GTuck really outdid himself. They are topped with crushed pistachios (YUMMMM) on top of a bed of zucchini “noodles”. I could see myself eating this weekly, it was that good.
This was a side-dish – or as I referred to it – it was my dessert. It is from the same cookbook as above, and is the Fried Apples with Bacon and Pecans. Sounded weird to me – apple/bacon combo, but it works. Trust me.
Of course, not to be boring – but I created a kid-friendly lunch too. It consisted of nitrate-free hot dogs, steamed butternut squash with crushed walnuts and cinnamon and sliced strawberries. It was delicious.
I was worried about eating out and staying on track. However, if you didn’t know, Ruby Tuesday has an incredible paleo-friendly / diet friendly menu, and are extremely flexible with “substitutions” and asking for things “minus” this or that. I had a petite sirloin (cooked without butter or spices), a side of grilled zucchini and spaghetti squash. It was filling, tasty, healthy and UNDER 400 calories!!
Lastly, I am always motivated in the morning to get out of bed, just to eat breakfast. I know this sounds crazy, but I literally jump out of bed with the thought of eating a great breakfast. I tend to eat the same thing everyday, which is Paleo-Cereal (strawberries, raspberries, blackberries, blueberries, almonds, walnuts and almond milk):
But, after dinner last night, I decided in the morning to attempt to make a Sweet Potato Corned Beef Hash with the leftover corned beef I had. OMG – this was amazing. Nothing to it – peeled then shredded the sweet potato, heated up some coconut oil, threw the potato in there, threw in some diced onion, and when it was almost done, threw in the diced up corned beef with a dash of salt and pepper. In a separate pan I fried up an egg. This was breakfast AND lunch – it was that good.
Tomorrow’s weigh-in will tell me if eating all this “healthy” tasty food is actually helping me lose weight. I guess even if it hasn’t, I’ve enjoyed every single morsel that has touched my lips, and I’m not feeling deprived of anything, so I’d still be happy. However, if you asked my kids about this new “healthy” eating, they might not agree…….

Breakfast and lunch as in you ate it twice or that's all you had for both meals?
I love that spaghetti squash at Ruby Tuesdays - it's great for my diabetic diet too :-)
